Lobster Mac & Cheese

Warming and luxurious fare

On a January day when it's cold and grey, what could be more cheering than lobster Mac and cheese. I've seen lots TV chefs cook this up and although we love lobster, it hadn't really appealed. And then we cooked it over Christmas and discovered what we'd been missing.

We used the Hairy Bikers recipe but with some tweaks of our own. We used a whole lobster, to, took out the meat and then roasted off the shells in some butter, sploshed in a bit of white wine, reduced it and added that to the sauce. We also missed out the bacon and cayenne and used some leftover Comte and Gruyere. 

Crab would also work well for this. Use fresh whole crab or crab claws when they're in, or pop some of our frozen crab meat into your freezer so you can make it anytime.

Delicious comfort food with a touch of luxury. Yum! The ideal way to bring some cheer to a cold, grey January night's supper.
